Ingredients

  • 2 cups brown sugar
  • 8 T butter
  • 1 c shredded coconut (optional)
  • 3 eggs
  • 2 cups self-rising flour
  • 8 oz white chocolate bar, chopped (I like chopping a bar in this better than using chips)
  • 1 T vanilla
  • 1 c walnuts (you can use pecans if you prefer)

Instructions

  1. Preheat oven to 375 degrees
  2. Spray a 9x13 inch cake pan with non-stick spray
  3. With an electric mixer cream sugar and butter together until smooth
  4. Add butter and combine
  5. Gradually add flour and mix well
  6. Add vanilla
  7. Fold in nuts, coconut (if using), and white chocolate by hand until evenly distributed
  8. Spread in prepared pan and bake for 22 to 25 minutes
  9. I like them soft and chewy so I bake for 22 minutes
  10. Allow to cool slightly.
