  • ½ c baby spinach (arugula would be great too)
  • ½ garlic clove grated
  • 1 teaspoon horseradish
  • 1 tablespoon lemon juice
  • ¼ c plain low fat yogurt
  • 2-3 oz leftover pork roast (or chicken or beef)
  • salt and pepper to taste
  • 1 whole wheat pita


  1. Split open pita and fill both halves with equal amounts of baby spinach and leftover pork roast.In a small bowl, stir together yogurt, lemon juice, horseradish, garlic, salt and pepper.Drizzle creamy horseradish sauce over the pork or serve along side the sandwich as a dipping sauce.
