Ingredients

  • 3 Tablespoons balsamic vinegar reduction or balsamic glaze
  • ½ teaspoon black pepper
  • 3 Tablespoons butter
  • 2 Tablespoons chopped fresh herbs (we used basil, parsley, and rosemary)
  • 2 teaspoons minced garlic
  • 2 oz. goat cheese
  • ½ teaspoon kosher salt
  • 2 Tablespoons olive oil
  • ¼ cup parmesan cheese
  • 2 pinches sugar
  • 3 slicer tomatoes

Instructions

  1. Preheat the oven to 450 degrees
  2. Line a baking sheet with aluminum foil
  3. Slice the tomatoes about a ¼ in thick and spread them out on the baking sheet
  4. In a small bowl, whisk together olive oil, garlic, salt, pepper, and sugar
  5. Pour mixture evenly over tomatoes
  6. Bake in the preheated oven for 20-25 minutes or until tomatoes are slightly shrunk and softened.Meanwhile, heat a skillet over medium high heat
  7. Melt butter in a microwave safe container
  8. Brush both sides of the bread slices with butter
  9. Place slices in the skillet and grill until evenly browned
  10. Flip bread and continue to grill until both sides are browned
  11. Remove bread to a plate.Add ¼ cup parmesan cheese to the hot skillet
  12. Grill until cheese is crispy and browned on both sides, flipping halfway through
  13. Remove to a plate and break into pieces.To assemble, divide bread slices among two plates
  14. Smear one side of the bread with goat cheese
  15. Top with 2-3 slices roasted tomatoes
  16. Sprinkle with assorted herbs
  17. Drizzle evenly with balsamic vinegar reduction
  18. Top with parmesan crisps
  19. Serve immediately.
