Ingredients

  • 3 (12 oz) packages cranberries (36 oz TOTAL), fresh or frozen
  • Mint, for garnishing, optional
  • 24 oz raspberries, fresh or frozen
  • Water or seltzer water to dilute the drinks
  • 4 cups sugar
  • 1 gallon plus 1 quart water

Instructions

  1. Combine the cranberries and raspberries in a large pot.Add the sugar and water
  2. Bring it to a boil, reduce to a simmer and cook for approximately 30 minutes - 45 minutes, until the fruit is nice and mushy
  3. The cranberries will "burst".Strain the liquid through a fine mesh sieve lined with a paper towel or a cheesecloth
  4. Discard the cooked berries
  5. Cool.I usually store the concentrate in 2 liter canning jars
  6. You will have approximately 5½ liters of concentrate.When you're ready to serve, dilute the concentrate with water or seltzer water
  7. You can also add some mint.
