Ingredients

  • 1 c mixed berries - frozen or fresh
  • 2 tsp brown sugar (or more to taste)
  • 1 tsp cinnamon
  • 2 Tbs flax seed meal
  • ¼ tsp salt
  • 1 c skim milk
  • ½ c steel cut oats
  • 2 Tbs shredded coconut - unsweetened
  • 1 tsp vanilla extract
  • 2 Tbs walnuts - chopped
  • 1 c water

Instructions

  1. In a medium sauce pot, wisk together milk, water, cinnamon, vanilla and salt then bring to a gentle simmer.Add steel cut oats and bring to a boil, stirring frequently.Reduce heat to low and continue to cook until most of the liquid is absorbed, about 15 minutes; stir occasionally.Towards the last few minutes of cooking time, mix in walnuts, coconut, berries and brown sugar
  2. Cook additional 5 minutes then serve.
