Ingredients

  • ½ cup alfalfa sprouts
  • 2 tablespoons almond milk
  • 1 ½ cups black beans, drained and rinsed
  • 4 large whole wheat or brown rice tortillas
  • 1 chipotle chili pepper in adobo sauce
  • 1 cup cooked quinoa
  • 1 teaspoon minced garlic
  • ¼ teaspoon fresh ground black pepper
  • 1 tablespoon lime juice
  • ½ cup diced red onions
  • 2 cups romaine lettuce, chopped
  • ½ teaspoon sea salt
  • ½ cup tofu mayo or mayo
  • 1 tomato, seeded and diced

Instructions

  1. Mix quinoa and black beans together in a medium bowl
  2. Lay tortilla flat and top with a tablespoon of chipotle sauce
  3. Place quinoa mixture on tortilla and top with onions, tomato, lettuce and sprouts
  4. Drizzle with additional sauce if desired
  5. Roll tortilla and cut in half to serve.Combine ingredients in a blender or food processor and process until smooth.
