Ingredients

  • 1 cup alfalfa sprouts
  • 2 cups arugula
  • 1 avocado, peeled, pitted and diced
  • 4 ounces turkey bacon or tempeh bacon
  • ½ cup grated cheese or Daiya
  • 1 tablespoon cornmeal
  • 1 lb gluten free pizza dough
  • 2 tablespoons Greek Yogurt
  • ¼ teaspoon fresh ground pepper
  • 1 tablespoon fresh lime juice
  • 2 tablespoons Mayo
  • ½ teaspoon sea salt
  • 1 tomato, sliced thin
  • 2 ounces goat cheese or nut cheese, crumbled

Instructions

  1. Preheat oven to 420 degrees.Cook bacon until crisp and crumble into bite sized pieces.Place a large sheet of parchment paper on your counter and sprinkle with cornmeal
  2. (If you are allergic to corn use flour.) Roll dough into a circle about 12 inches wide
  3. Transfer to the pizza peel
  4. Sprinkle with cheeses and bacon
  5. Baked for 14 to 16 minutes, until the crust is browned and the cheese is melted.Meanwhile, place arugula in a large bowl
  6. In a small bowl combine yogurt, mayo, lime juice, salt and pepper
  7. Toss with arugula
  8. Place on warm pizza and top with sprouts, tomato and avocado
  9. Serve immediately.
